Here's a tasty recipe you can enjoy as a side dish with any protein main dish or serve as a vegetarian main dish without protein. Sweet potatoes are naturally sweet on their own and need nothing more to make them fabulous. But when you combine the natural sweetness of sweet potatoe with the fresh, bright, natural sweetness of pomegranate, you've got a sugar free winner dinner!
You can make this recipe with brown rice if quinoa is not your favorite, but it is a healthy gluten free option. Cooking quinoa is simple and a lot less work then cooking rice. To make 1 cup cooked quinoa, add 2 cups of water to a sauce pan and add 1/2 cup dry, rinsed quinoa seeds. Bring to a boil and simmer for 15 minutes or until all water is absorbed. No draining is needed. Fluff with a fork and you're done.
If you are living sugar free, natural unrefined sweet ingredients that come from healthy fruits and vegetables is always the best choice to help curb your sweet tooth. While this recipe may not be a dessert to curb that sweet tooth, it is a hearty dish that will leave you feeling very satisified and less likely to be tempted by unhealthy sugar laden treats. You can find dried unsweetened cranberries at your local health food store. Most are sweetened with apple juice concentrate. Beware of many brands of dried cranberries and most use refined sugars to sweeten. Always read the labels for sugars listed.

Ingredients
  • 2 cups chopped, peeled sweet potatoes
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup pomegranate seeds
  • 2 scallions
  • 1 cup cooked quinoa
  • 1/4 cup dried cranberries, no sugar added
  • Dressing
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • salt & pepper to taste

Preparation
  1. Preheat oven to 400 degrees.
  2. In a bowl mix olive oil and sweet potatoes together, lay on baking sheet.
  3. Season with salt and pepper.
  4. Bake for 30 minutes.
  5. In a serving bowl mix together pomegranate seeds, scallions, quinoa, dried cranberries and toss with dressing.
  6. Once sweet potatoes have baked and cooled add to the rest of the ingredients.
  7. Serves 2 or 4.
