To make 1 cup cooked quinoa, add 2 cups of water to a sauce pan and add 1/2 cup dry, rinsed quinoa seeds. Bring to a boil and simmer for 15 minutes or until all water is absorbed. No draining is needed. Fluff with a fork and you're done.

Ingredients
- 2 cups chopped, peeled sweet potatoes
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup pomegranate seeds
- 2 scallions
- 1 cup cooked quinoa
- 1/4 cup dried cranberries, no sugar added
- Dressing
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- salt & pepper to taste
Preparation
- Preheat oven to 400 degrees.
- In a bowl mix olive oil and sweet potatoes together, lay on baking sheet.
- Season with salt and pepper.
- Bake for 30 minutes.
- In a serving bowl mix together pomegranate seeds, scallions, quinoa, dried cranberries and toss with dressing.
- Once sweet potatoes have baked and cooled add to the rest of the ingredients.
- Serves 2 or 4.
